Food and Wine Pairing Recipe of the Week – Authentic Greek Salad

Did you know that in Greece feta was originally made using only sheep or goats milk? It is in only recent times and since feta has been produced around the world that other milk has been used in the production of this lovely salty white cheese. Neudorf Dairy Feta is particularly salty and tangy, easy to cut into cubes or crumble as desired, it is made to a traditional Greek recipe and is packaged fresh to order.

So make the most of the seasonal produce currently on offer and encourage summer to last a little longer by throwing together this gorgeous Authentic Greek Salad.

Ingredients

1 large lebanese cucumber quartered lengthways and chopped
250g ripe cherry tomatoes halved or quartered
1 red capsicum chopped
1 red onion chopped
1 cup Greek Kalamata olives
200g Neudorf Feta
1T Chopped fresh Oregano (optional)
2T top quality extra virgin olive oil

In a salad bowl combine the cucumber, tomatoes, capsicum, red onion and Greek kalamata olives. Top with Neudorf Dairy feta, then sprinkle with oregano and drizzle over extra virgin olive oil. Season with freshly ground pepper and salt to taste.

Wine Pairing – Bald Hills Last Light Riesling 2009

We would recommend a light white wine that is slightly sweet, yet crisp and citrusy. Try this dish with our 2009 Last Light Riesling. This will balance perfectly with the combination of flavours in this dish.
