We adore avocados at Bald Hills. They are one of the few fruits which ripen off the tree and are available fresh and beautiful and New Zealand grown almost all year round. If you’re lucky enough to nab the ripe ones from the supermarket bins before anyone else, have a go at this simple yet mouth watering recipe for Avocado Salsa. Our daughter Sue developed this recipe and it is a family favourite!
Sue’s Avocado Salsa
Fresh and delicious!
2-3 perfect avocados (not too ripe, and not to be used if they are bruised and blackish inside!)
2 teaspoons balsamic vinegar
1/2 red onion, finely chopped
1 clove garlic, smashed and chopped
Juice of 1 lime
2 tomatoes, diced
1-2 small chillies, finely chopped and de-seeded
Sea salt and ground pepper to taste
Bunch of coriander, leaves and roots, chopped
Prepare all of your ingredients as outlined above. Fold all together gently. Be sure not to over-work! Set aside before serving and let the flavours develop. Serve as a dip with a big bowl of plain corn chips.

Save this dish for our Pigeon Rocks Central Otago Pinot Gris, a little chilled. When there is a fair amount of chilli in a dish I like the wines to be cold, but not so cold that the flavour of the wine is masked! Delicioso!
