Full bodied entry with apricot, peach and sweet raspberry and strawberry. Silky and lush on the mid palate with a lovely texture and complexity. The finish is long with pear and melon tones.
The fruit selected for this Rosé is 100% hand-harvested Pinot Noir (clones 115, 114 and 113). Harvest took place on 31 March and 4 April2021. The fruit was whole bunch pressed to a stainless steel tank for cold settling for two days. The juice was then racked and the juice inoculated with selected wine yeast. The cool fermentation was stopped to retain a touch of residual sugar.
